Chocolate Truffles

My sister Elise taught me how to make these chocolate truffles years ago and they have been a favorite of mine ever since. They have a smooth, creamy texture that will melt in your mouth. Additionally, you roll them in fun toppings like sprinkles, nuts, and other chocolates! These little bites of heaven also make a great neighbor treat for Christmas because it is so easy to make a bunch at a time.

Chocolate Truffles Topping Ideas

These chocolate truffles are so delicious you could seriously roll them in dirt and they would still taste good. However, since you probably don’t want to to do that, here are some topping suggestions:

If you want to flavor the actual chocolate truffles, then here are some options you can add to the mixture:

Ingredients

Chocolate Chips – You want to use good-quality chocolate chips for this chocolate truffle recipe. Put down the store-brand, and grab some Ghirardelli, Guittard, or Scharffen Berger. You can also use high quality chocolate bars. Cut the bars into small pieces and then melt the chopped chocolate the same way as the chocolate chips. Creamy Peanut Butter – My special trick for getting peanut butter out of a measuring cup is spraying the cup with a little cooking spray before adding the PB. It will slide right out!  Cool Whip – Make sure to thaw the Cool Whip to room temperature. If it is too cold then it will make the chocolate chunky. 

Method

First, melt the chocolate chips. You can double boil them or melt them in the microwave in a heat-proof bowl.Then, stir in the peanut butter and Cool Whip. The mixture will stiffen pretty quickly so stir quickly and make sure to scrape the bottom of the bowl! Then, let the mixture chill in the fridge until it is firm. Usually this takes about 2 hours. Use a small cookie scoop to portion out each truffle and then roll the truffle into a ball in your palms. Then, place the truffles on a baking pan lined with parchment paper. Once all the truffles are rolled, choose your toppings and place them in small shallow bowls. Then, roll each truffle in the desired topping. Store the chocolate truffles in an airtight container in the fridge.
