These Lasagna Roll Ups are just like regular lasagna except you spread meat sauce and cheese filling on each noodle and then roll them up! It makes perfect individual portions that are easy to serve. I also love the filling to pasta ratio! Some lasagnas are all noodle and no filling, but these are so much better. They’re one of my favorite busy weeknight meals or when I have company coming over and I want to be able to visit and not spend a lot of time on dinner. Roll ups can be made a day ahead and they always turn out great. They’re everything you love about classic lasagna or skillet lasagna but in a fun roll up. Serve with a simple green salad and some crusty garlic bread and you’ve got an easy, filling supper that everyone adores!

Gather your favorite lasagna ingredients and start rolling! Here’s what you need to make this fun and filling dinner:
Lasagna noodles – boil in a large pot of water until al dente, then drain and set aside.Mozzarella cheese – shreddedItalian sausage – you can substitute ground beef or ground turkey, or even ground chicken, whatever you have on hand.Onion – dicedGarlic – about four cloves, minced or four teaspoons of pre-minced garlicSpaghetti sauce – you can use your favorite marinara sauce or make your own! Is This Recipe Freezer-Friendly?
Yes! One of the biggest reasons this is a go to dinner for me is how easy they are to make ahead of time and freeze! You can make a bunch of extra rolls, cover the casserole dish with foil, then just freeze them (without the sauce). Next time you make the roll ups, you can just thaw them and throw them in a pan with some sauce and they are ready to bake! This is the perfect meal to take to friends who just had a baby! They can stick it in the freezer and enjoy whenever they don’t feel like cooking!
How to Store Leftovers
Store any leftovers in the refrigerator, tightly covered, for up to three days. Or, pop them in the freezer, as discussed above. To reheat, thaw in the fridge, then microwave on a plate until they’re warm.
