This recipe starts with a simple Belgian waffle box mix. We like to use the Krusteaz brand. You can also make your own Belgian waffle mix from scratch, if you prefer. Pour the mix into a large bowl. Lightly beat two eggs, then pour them in with the waffle mix. Add oil, water, pumpkin puree, cinnamon, nutmeg, and brown sugar.
