Microwave Baked Apples

These Microwave Baked Apples are so easy to make and taste just like apple pie or apple crisp! A large, crisp apple, with delicious cranberry filling and topped with a big scoop of vanilla ice cream makes a tasty after school snack or quick dessert. My kids like them with extra cinnamon sprinkled on top and I love mine with ice cream and whipped cream on top. They’re pretty, versatile and a healthier alternative to regular apple pie.

Suggestions for Baked Apples in the Microwave

You may prefer to peel the apples for baking, but I like to leave the apple skin on. It helps the apple hold its shape while baking and eating, as the skin serves as a bowl of sorts.For this recipe I used Fuji apples from Stemilt Growers in Washington State. My family and I love their apples. They are the sweetest and most crisp apples I’ve ever had..You could also use Granny Smith, Gala, or any other firm, slightly tart apple.For the filling, you could add chopped pecans, walnuts or almonds for extra crunch and texture.Microwave on high for about five to six minutes. You want the apple to be tender but not too mushy.There will be juice and filling liquid on the plate after microwaving. Spoon it back over the apples before serving.  Then top wth either ice cream or whipped cream (or both!)
