Oven Roasted Green Beans

Green beans have always been a favorite side dish of mine. Fresh green beans were abundant from our garden and my mom was was always dreaming up creative ways to use them. I love the roasting method because they almost remind me of French fries, except they are low-carb and actually good for you! Crisp on the outside, tender on the inside, and bursting with flavor! They’re a perfect side veggie for any meal. I love serving these beans alongside these Easy Crockpot Pork Chops, this tender Oven Roast Beef or our Country Fried Chicken with Country Gravy.

How to Season Roasted Green Beans

Roasted green beans come to life with just a drizzle of olive oil, some garlic powder, sea salt and pepper but if you want to jazz them up a bit, you can try one of these variations:

Parmesan Green Beans – sprinkle parmesan cheese over the green beans in the last 5 minutes of roasting and return to the oven until done.Extra Crispy Green Beans – after tossing the beans in olive oil, add a cup of panko breadcrumbs and toss again until beans are coated in crispy crumbs.Bacon Green Beans – Add some cooked bacon when tossing the green beans. You can skip on the olive oil if your bacon still has some of the grease on it from cooking.Garlic Lemon Green Beans – After cooking, toss with 1 Tablespoon of fresh lemon juice to give the roasted green beans some added lemon zest.Green Beans with Slivered Almonds- Need even MORE crunch? Try adding some almonds or pine nuts. They will get nice and toasty in the oven.Roasted green beans taste delicious with fresh basil, parsley or any other fresh herbs you have on hand.Try roasting the green beans along with carrots, potatoes, brussels sprouts, and cherry tomatoes on the same pan for a hearty side. Top with feta cheese after roasting. YUM!

Tips to Make Green Beans Crispy

Cook them at a higher heat– anything less than 425-degrees isn’t hot enough.Don’t line your pan with foil. Foil tends to keep your food more moist. This is great for baking chicken but not to great for roasting vegetables.Give the green beans some distance between each other. Arrange the beans in a single layer on the pan. The less you can overlap, the better!Heat up your pan first. I love this tip from Primavera Kitchen. Heat up your pan for 10 minutes before adding the green beans. It will get those beans heated up more quickly, which is exactly what you want.Cover your baking sheet with aluminum foil to make clean up easier.Use a roasting rack if you have one. It takes more time when arranging the green beans but it keeps them up off the pan which helps them to crisp up better.

How to Roast Frozen, Store-Bought Green Beans

If you don’t have fresh green beans on hand, it’s totally fine to use frozen! Rinse off any excess ice and dry the beans with a paper towel. You don’t want that extra moisture if you can help it. Then, follow the recipe as written. Just throw them in the bowl and toss them with the oil as if they were fresh. They will be more stiff (of course, they are frozen), but still try your best to get the green beans as evenly coated as possible.

How Long to Bake Roasted Green Beans

This really depends on what kind of green beans you are using. Sometimes we are able to get some pretty big green beans from our garden. These usually take a few minutes longer than what is mentioned in the recipe below. If you are using a thinner green bean like hericot verts, you may be able to shave off a few minutes of roasting time. Bottom line, try to keep an eye on them.

Can Roasted Green Beans Be Frozen?

Yes! They can be stored in a shallow, airtight container and be kept in the freezer for up to a year. You can also refrigerate them and they will stay good for 3-5 days. Just be sure to get them refrigerated (or freezing) within an hour or roasting them.

How to Re-Heat Roasted Green Beans

You can re-heat green beans that have been refrigerated or frozen by allowing them to thaw and then sautéing them in a skillet until cooked through. You can also re-heat them in the oven at 425-degrees for 10-15 minutes or until heated through. Avoid using a microwave to heat them though, as they won’t be as crisp.
