Raspberry Cordial

I first heard of Raspberry Cordial when I read Anne of Green Gables. If you’ve never read it, I’ll give you a quick summary of the incident. Anne and her friend Diana are having a tea party and they are supposed to be drinking raspberry cordial. Instead, they mix it up with a bottle of currant wine. Anne’s adoptive mother comes home to find two very giggly, drunk young ladies. It is a sweet and silly scene, and I always wanted to know what Marilla’s Raspberry Cordial would taste like! I love making this recipe for special occasions. Sometimes we drink it as is, and other times we will mix it with soda water for a sparkling treat!

Tips for Making Raspberry Cordial

When you cook the raspberries down, the mixture will be filled with seeds and pulp. To make the raspberry syrup, you’ll need to pour it through a strainer. If you pour it through once, it will get rid of most of the seeds. Pouring it through more than once will get rid of more of the pulp. If you’re okay with pulp in your Raspberry Cordial, you only need to strain it once. It is just a matter of preference.

You definitely want to let this chill in the fridge until it is completely cold. I would even make it the day before and chill it overnight if possible. This gives the flavors a chance to mix even more.
