Crockpot Roast Beef and Vegetables is one of those meals that instantly transports me back to my childhood. Even before the days of slow cookers, my grandmother and mother would roast vegetables with a pot roast in the oven. I loved coming in from church on a Sunday to the smell of fragrant meat, carrots, potatoes, or sweet potatoes. Of course you can still use the oven for this recipe, but it requires the oven being on for hours and heating up the house. Plus it’s so easy to just toss all the ingredients into the Crockpot and let it slowly cook all day. Dinner is ready with minimal effort and it’s always a crowd pleaser!

Crockpot Beef Stew, which we also call Irish Beef Stew, is one of our favorite meals to make on a chilly evening. The simmering stew meat cooks low and slow in the Crockpot, the savory smell permeating the house. It’s such a delightful fragrance to come home to! Our Irish relatives make this each year for St. Patrick’s Day. This recipe is similar to a traditional Irish stew; the only difference is we don’t add beer to the broth. No matter the occasion or season, this stew is warm, comforting and filling.

This is our go-to shredded beef recipe, I simply love it! It really doesn’t get any easier than throwing a roast in a Crockpot with a handful of ingredients and letting it cook all day. It literally takes 5 minutes of prep time. Growing up, we called this “Mom’s Lake Powell Beef” because she would always make it a few days before we went camping at Lake Powell. She would freeze it and then heat it up over a camp stove. I can’t begin to tell you how good this tasted after a long day of playing on the lake. We served it up in some tortillas for an easy meal. It was delicious!

Christmas and Easter dinners wouldn’t be complete without a succulent ham. Dripping with maple and brown sugar glaze, this ham is slow cooked in the Crockpot and always turns out perfect! Sometimes if I can get a ham on a good sale, I will make a ham for Sunday dinner and then we can make lots of different meals throughout the week with the leftovers (more on that below, we have lots of great leftover ideas). We found a similar recipe on the Food Network years ago and adjusted it for the Crockpot. I love putting ingredients in the slow cooker right after lunch, then I don’t have to think about it again until dinner time. The aroma welcomes us all home and we can’t wait to gather around the table for a nourishing, hearty meal together.

This Crockpot Pizza Bake has all of the favorite flavors of pizza in a hearty pasta dish. I love the convenience of being able to make it ahead of time. It doesn’t cook that long in the Crockpot, just two or three hours. Toss all the ingredients in the crockpot just before picking the kids up from school. This frees up that hectic dinner time rush to spend on homework or running errands, or maybe even relaxing for a little while with a good book – wouldn’t that be nice!
Zuppa Toscana Soup
Zuppa Toscana is one of our favorite soups at Olive Garden, and this copycat recipe is spot on. It is the perfect for the cold days of fall and winter, but really it is great any time of the year. The soup is a creamy and hearty with a bit of a kick. If you like some heat in your soup, be generous with the red pepper flakes. For a more mild flavor, a little goes a long way. If you like Olive Garden’s Zuppa Toscana soup, you are going to love this (I think it tastes better than Olive Garden’s Zuppa Toscana recipe — it is more creamy and flavorful). I came up with this crock-pot version the other day when I didn’t have a lot of time later in the day to prepare dinner and fell I love with the ease and the flavor!
Crockpot Salsa Verde Chicken
This Crockpot Salsa Verde Chicken is so easy.. really, it is almost TOO easy. I have hesitated even putting it on here because it is so easy. Lucky for you, I changed my mind because it is so flavorful. And easy. Did I mention that already? I love making it on those days I really just don’t feel like making dinner. Most of the time we will serve this over just plain, cooked white rice and garnish with cilantro.

This pasta dish is one of those great recipes you can make up in a flash. While it cooks the flavors all come together and make the chicken taste amazing! When it is ready the boneless skinless chicken breasts easily shred up. The zesty, creamy sauce, made with cream of chicken soup and cream cheese, can be served over noodles, rice, or even cauliflower rice. We like to serve it with steamed broccoli. You can’t beat a slow cooked meal that is easy, delicious, and family friendly!
