Three ingredient pumpkin cookies…too good to be true? That’s what I thought when my daughter brought home this recipe one day and insisted on making them immediately. But she was right, they were delicious! Besides that, they’re easy! They’re full of pumpkin spice flavors, fragrant ginger and cloves without having to measure out a bunch of spices. We make them often, especially when cookie cravings strike and we don’t have time for a longer recipe. Here’s all you need:

Pumpkin Cobbler
Pumpkin Cobbler (also called pumpkin dump cake or upside down pumpkin pie) is the perfect dessert to warm you up after a long night of trick-or-treating or after a cold fall night of football. I like to call it a cobbler because it is made in a similar way to fruit cobbler. The pumpkin filling goes into the bottom of the dish, then you have a yellow cake mix crust mixed with spices and a drizzle of butter on top. Don’t forget the sprinkling of pecans. It is super easy to make and you are going to love the way your house smells while it bakes in the oven! It is better than any fall-scented candle. I love to eat it warm right out of the oven, but if I am lucky enough to have leftovers, it also tastes great cold the next day!
Pumpkin Cheesecake with Caramel Pecan Topping
Why make three separate holiday desserts when you can make one, extra delicious dessert? It really doesn’t get much better than this when you want to splurge on an incredibly delicious dessert. Sprinkle the top with some dark or white chocolate chips for the finishing touch. Beautiful, tasty and easy: that’s MY kind of dessert!
Pumpkin Roll
Pumpkin Roll is one of those desserts that feels and tastes like fall and holidays. Delicate, light cake rolled up with creamy and rich cream cheese frosting, dusted with gloriously sweet powdered sugar makes it an elegant, gorgeous centerpiece to any family holiday buffet. It also makes a beautiful gift for friends and family.
Pumpkin Pie Recipe
Ah – the classic Thanksgiving dessert, a slice of pumpkin pie with a dollop of whipped cream. There is something about making your own pumpkin pie that you just don’t get with a store-bought pie. I think some of it is the amazing way that your house smells when it is baking (thanks to the spice blend of cinnamon, ginger, nutmeg, and cloves) but, more importantly, it just tastes so much better! We have eaten a LOT of pumpkin pies in our times, and we believe this is the best pumpkin pie recipe. In addition to being delicious, it’s really such an easy pumpkin pie recipe. Pumpkin Dip
Pumpkin Dip, with its creamy cool texture and spicy sweet flavor, is the very best fall treat! My sister-in-law, Paige made this dip when we were visiting for Thanksgiving one year and we could not get enough of it! Now it’s a staple at our house during the autumn holidays. It’s different than most fall treats; light, cool and creamy instead of heavy like a pumpkin pie. We love serving it at holiday buffets with a big platter of gingersnaps or shortbread cookies. This dip is something unique that everyone is excited to try and it’s always the first thing to go at a party.
Easy Pumpkin Trifle
This Easy Pumpkin Trifle has a ginger snap cookie layer, a rich pumpkin spice cheesecake layer, and a fluffy homemade whipped cream layer. Yummy Pumpkin Eclair Cake
This Pumpkin Eclair Cake is the perfect fall dessert. It has all of the flavor of pumpkin pie with a creamier and lighter texture. Run to the grocery store right now and pick up some pumpkin spice instant pudding mix, because it is only available for a little while and it disappears off the shelf FAST! I especially like this cake as an early fall dessert because it is a chilled cake and some of these “fall” days are still pretty warm.
Pumpkin Poke Cake
Just like the name implies, Poke Cake is made by poking holes into the cake after baking (while still in the pan), which are then filled with yummy goodness like pudding, jellos, cream, condensed milk… basically anything that is deliciously rich and decadent. You can use the end of a wooden spoon, a knife sharpening rod, or a straw to get those holes just the way you like them.

Pumpkin Bundt Cake (Nothing Bundt Cake Copycat)
Take this Pumpkin Bundt Cake to your next holiday gathering and you will have people hunting you down and BEGGING for the recipe. This cake is so moist and the frosting is to die for! I based this recipe off of our Nothing Bundt Cakes’ Chocolate Chocolate Chip Cake Copycat. I have made that cake several times and it always turns out AMAZING. For this cake I subbed in spice cake mix instead of devils food cake and pumpkin spice pudding instead of chocolate pudding. Pumpkin spice pudding is only available during this time of year so I always make sure to stock up on it whenever I see it in the store.

We simply love this Pumpkin Bread. It is easy to make and it ALWAYS comes out perfect. This is a great recipe to get the kids involved because it is so easy to do. Just a few simple ingredients stirred together and you are done. No need to get out mixers or dirty any appliances, this can all be done with a mixing spoon and some measuring cups!
